
2 1/4 cups All Purpose Flour (or 2 cups AP and 1/4 cup Rye Flour)
1 tablespoon sugar
1 teaspoon salt
2 sticks of cold butter cut in cubes
5 Tablespoons Ice Water
Mix all dry ingredients in bowl. Add cubes of butter and coat with flour. Using your finger tips smoosh butter into flat pieces. Don’t over smoosh! It is ok to have some larger chunks of butter. When the contents of the bowl resembles oatmeal you are finished. Add ice water and begin to gather dough into loose ball. Do not knead. Just lightly gather with hands squishing a bit to form a ball. Break in half and form into disks. Cover with plastic wrap and refrigerate for 1 hour.
Let dough sit at room temp for 5 minutes. Lightly flour surface and roll dough out into 13 inch round. Line bottom of pie dish. Make sure to press dough into bottom edge of pie dish.
Fill with your choice of filling!
I bake my pies at 350 for 1-11/2 hours to insure bottom cooks nicely and top is really deep golden brown.
